Let it the shell dry up well. Then just keep it in my basement. I wish I had a root cellar. Mine end up drying out too much by spring time. I'm gonna eat more this fall and winter so there won't be many left over.
I've never tried canning any, or dehydrating either. If I get time may have to try one or both of those.
@bacpacker I turn mine into apple and squash soup and can half of it. The rest goes in the basement in the pantry. Keeps pretty well. By spring I'm tossing some if I don't can it into soup
I hadn't thought about soups. May have to try that. Do you make a blend with the apples and squash? What ratios?

When I get back into town in a few weeks I'll dig up the recipe and post it. From what I recall off the top off my head two winter squash (usually butternut) a half dozen apples. Season and roast. Blend it all up after, add your choice of stock and cook and simmer to distribute the flavours. Process for canning, add some roasted cut up red peppers.
