After the 10 years of predicted storage life....are there concerns about ecoli or salmonella or food poisoning in general?

It all depends on whether the food in question was properly dehydrated and then properly stored the entire time. There are several variables that would come into effect pertaining to storage including heat, & light being the worst enemy's.
Same can be said for most food regardless of how preserved. Freeze dried don't last near as long in hot temps
The ecoli or salmonella would have to be present when food was packed, so it probably wouldnt make much difference if you opened it 10 days or 10 years later.
This is also assuming that you do not introduce it yourself when you open the container.
They say that the cockroaches will be the last creature alive on this earth.
I intend on being the last person alive still stomping cockroaches.
